DescriptionIRTASIM is an application that can determine drying parameters for meat products, sausages and / or simulate drying processes. IRTAsim is a tool to assist product development and can provide orientative information regarding a process such as water loss/time, water content profile, etc., depending on the conditions applied during the drying process. IRTAsim provides information on the movement of water into the product (diffusivity coefficient). It also provides visual information on other details of the process such as the drying curve and the profiles of water content from the surface to the core of the product. This information makes possible, by means of virtual techniques, to test and change the evolution of a product if any variations in the drying process are introduced.

The development of IRTAsim was funded by xarta (www.xarta.cat) and FP6 project Q-Porkchains (www.q-porkchains.org).
