How does it work?

Primary objective Indicators monitoring the composition of modified atmosphere in food packaged. Leak indicators for modified atmosphere packages.
Working principle Intelligent packaging systems in food processing include the application of different indicators which are able to monitor the state and quality of the product. The indicators monitoring the gas composition of modified atmosphere in the packages of food products can facilitate the visual differentiation of quality and spoiled products [1,3,4,5].

Working principle of the indicators monitoring the gas composition in sealed food package is based on chemical reaction of the indicator component with a particular gas (oxygen, water vapour, ethylene, etc.) The response is visually apparent through the transparent package. Recently the application of gas indicators based on nanomaterials has been described [6,7].

biological Application of biosensors in this context could be expected in the future [2]. Optical, electrochemical, and mass-based tools for detection of foodborne pathogens are reviewed in [9].

Implementation

Maturity

- Application of O2 indicators, e.g. Ageless eye (Mitsubishi Co.), CO2 indicators, e.g. Reflex (Sealed Air Co.), ethylene indicators, humidity indicators, etc.

At research stage: - Indicators on the base of biosensors and/or nanosensors.warning.png" - Application of O2 indicators, e.g. Ageless eye (Mitsubishi Co.), CO2 indicators, e.g. Reflex (Sealed Air Co.), ethylene indicators, humidity indicators, etc.

Modularity /Implementation Production of the indicators of changes in modified atmosphere suitable for application on food package can be inserted in existing production lines.
Consumer aspects It can be expected that consumers will accept food packaging systems with the indicators of modified atmosphere composition. On the other hand, the legislation change is necessary because there is still only use by date description accepted. Combining two methods is misleading in case that use by date is over and indicator is OK and vice versa.

The consumers demand fresh products have under their control. There is contradictory demand to retailers interests. Causality: superior beef meet packed in modified atmosphere with spoilage indicator (analogous integrator of temperature abuse stick over the bar code, when darken, the bar code is hidden and product cannot be cashed) was ready for application. At the last moment the retailer refused to apply the technology in the Czech Republic) [8].

Legal aspects There is a general hygienic legislation on practical application of active and intelligent packaging systems for food processing in EU (Regulation No. 1935/2004 and 450/2009)
Environmental aspects There is little information concerning environmental impact of wide scale indicator production.
